
Every aspect of the vineyard…the visual sensation, the colour, the effervesence, the nuance, the taste, the touch and how they all interrelate…from the roots of the vines, to the branches, the leaves, the juice of ripe grapes…to the ‘Chai‘, the brain, where the magic happens, where the grapes will be turned into wine!
It starts at the roots, planted row upon row they start to grow branches, twisted and knarly, like life, their journey comes with lots of twists and turns, they carry the burden of heavy grapes in the process of growth. From the branches grow vine leaves with bunches of tiny, green buds, perfectly formed clusters bearing fruit, the early stages of becoming a full bodied wine. Successful, they will be pale in colour, made up of the flesh, the skin, the pips and stalks, juicy and plump, like the human body influenced by temperature, weight and size, before being carefully selected to make wine.
In the rays of the sun, the sprouting buds come to life with just a little rain water, too little they will dry up, too much and they will decay, these bunches of grapes are strong green, hard little pellets, they are clean, fresh, sleek and lustrous. A balance of quality, freshness, aromas, and intense sweetness and acidity; all the components that make up a delicious glass of wine, like our glands and hormones they need to work in harmony to produce great results.
Then, the last stage of the growth period, the fruits are ready to be harvested and sent to the ‘Chai‘, to be pressed and squeezed like the lungs, the air coming in, and the air going out, the source of life, the wine must also breathe. Filtered into huge vats, sturdy and strong, the liquid juice of the grapes bubble and spurt, heightened sweetness vs volatile acids, like emotions and feelings they must be finely tuned to work together in a symbiotic relationship.
Then, after months of patience, learning and practicing, after weeks of tying and tagging, pruning and picking, fermenting, bubbling, evolving and breathing, the wine is ready to be enjoyed using all of the senses, ready to experience the results at last, refined, individual…it has become an elegant, balanced fine wine!
